Instructions

  • Heat oil in a medium or large sized stock pot over medium heat.

  • Add onions and garlic and cook until onions are translucent.

  • Mix in seasonings and blend well.

  • Add the pureed beans to the pot and stir until ingredients are well blended.

  • Add the remaining ingredients to the pot and mix until fully combined.

  • Reduce heat to a simmer, cover and cook for 30 to 45 minutes.

  • Serve soup with tri-colored tortilla strips.

Notes
